Why we called it a lab
One Standard.
No Exceptions.
No sandwiches. No wings. No wraps. The whole kitchen exists to make one thing — and to make it right every single time.
A lab isn't a gimmick. It's a discipline. It's running the same process a hundred times until there's nothing left to improve. It's refusing to ship something that isn't ready. That's how we cook, and that's the only word that fits.

Who built it
Built by
One Person.
Nugget Lab was built by Danny Goddè — sole founder. He spent 17 years in the food trade before this, building a company from the ground up that sourced and imported ingredients from around the world. He knows where food comes from because that was his job.
The result is a restaurant that didn't have to figure out its supply chain. It already existed. The fruit behind our New Zealand Style soft serve has been sourced the same way, from the same regions, for over a decade. Day one is not the beginning of that story.

One thing The menu exists to perfect the nugget. Not to fill space, not to please everyone. Focus is the product.

Nothing pre-made Fresh every morning. Ground in-house. Hand-battered. If it can be made from scratch, it is.

Clean only If an ingredient doesn't belong, it doesn't enter the kitchen. That's not a marketing claim — it's how the place runs.

Worth the wait Limited sauces. Seasonal soft serve. Character drops. We release things when they're ready and pull them when they're gone. No permanent menu items just to say we have them.
